The wine was made in a reductive style to retain the fresh; fruity flavours
of the grapes. It was kept on the fine lees for 4 months for complexity
To obtain a certain style of wine for our new Sauvignon Blanc,
we selected a specific vineyard in Stellenbosch that produced
more tropical flavours and less green aromas.
The vines are 18 years old and the canopy was opened to give
more thiols and fewer pyrazines.
The yield was restricted to 8ton/ha.

It was kept on the fine lees for 4 months for complexity and balance.
